Thai Green Chicken Curry
Description
A spicy, tasty and crowd-pleasing Thai green chicken curry!
I would highly recommend letting your curry cool down slightly before serving! You can serve it with rice, poppadoms, naan, sambals or a combination of everything :)

Ingredients
- 400g chicken breast (chopped into small pieces)
- 1 teaspoon coriander leaves
- 1 teaspoon chilli flakes (optional)
- 1 tablespoon butter
- 1 white onion (finely chopped)
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- 1 red pepper (finely chopped)
- 1 yellow pepper (finely chopped)
- 1 sachet Thai green curry paste
- 1 can coconut milk
Method
- 1Fry your chicken with coriander leaves, chilli flakes, salt & pepper until browned; set aside for later.
- 2Melt your butter in a large pot on medium-high heat.
- 3Add your onion, garlic and ginger and fry until the onion is cooked.
- 4Add your peppers, a pinch of salt and fry for a further five minutes, stirring occasionally.
- 5Add your sachet of curry paste and stir thoroughly.
- 6Add a splash of water and scrape the bottom of the pot to prevent burning, and to form a thick paste.
- 7Add your coconut milk and chicken, and allow to simmer for 15 minutes.
- 8Allow to cool before serving and viola!
