Chickpea Tikka Masala

A super easy, tasty (vegan) crowd-pleaser, with only seven ingredients!
I enjoy this dish served along with rotis and fried bananas; but you could also serve it with rice, bread, sambals or any other side of your choice. For the rotis - I bought ready-made rotis from the store and lightly fried them on each side in a non-stick pan. For the fried bananas - I fried them in butter (can substitute for coconut oil as a vegan alternative) on medium-high heat for approximately 5 minutes a side.

Ingredients
- 1 tin chickpeas
- 1 tsp turmeric
- 1 tsp paprika
- 1 red onion (finely chopped)
- 1 yellow pepper (finely chopped)
- 1 sachet of tikka masala paste
- 1 tin coconut milk
Method
- 1Drain your tin of chickpeas and place them on a baking tray (lined with baking paper for less mess).
- 2Sprinkle chickpeas with turmeric and paprika and place in the oven at 180degrees for 15 minutes (it's not critical to preheat).
- 3In a pot or large pan, fry your red onion and yellow pepper in your oil of choice on medium-high heat until they start browning.
- 4Add your tikka masala paste and stir thoroughly. After about five minutes, add a splash of water and scrape the bottom of the pot to prevent burning.
- 5Remove your chickpeas from the oven and add to the onion/peppers mixture.
- 6Add your coconut milk and salt to taste, and reduce the heat to low and allow to simmer for 10 minutes.
- 7Serve alongside your side dish of choice and enjoy!
