Lentil & Black Bean Stew

A hearty and tasty vegan stew perfect for a chilli evening!
Delicious served with some bread or rice, or for something a little different - try it with my 'Easy Crumbed Mushrooms’

Ingredients
- 1 white onion (finely chopped)
- 2 cloves garlic (finely sliced)
- 1 chilli (sliced; optional)
- 1/2 tin brown lentils
- 1 tin black beans
- 1 heaped tsp cayenne pepper
- 1 tsp mixed herbs
- salt & pepper
- 1 tin diced tomatoes
- 1 sachet veggie stock
- 1 tblsp chutney
- 1 tsp worcester sauce
Method
- 1Fry your onion, garlic & chilli on medium-high heat in your oil of choice until onions become soft and translucent.
- 2Add lentils, black beans, cayenne pepper, mixed herbs & salt and pepper. Fry for a further ten minutes.
- 3Add diced tomatoes, veggie stock, chutney and worcester sauce. Stir thoroughly.
- 4Turn heat down to medium-low and allow to simmer for about 10 minutes until stew thickens.
- 5Serve with a dollop of yoghurt and a wedge of lemon and viola!
