Chickpea & Avocado Salad
Description
This recipe may seem so basic and super simple! To be honest, the reason why I have included it is to remind myself to make it because every time I do it’s just so wholesome and delicious. Perfect for a quick, light yet substantial lunch.
Serve with a drizzle of olive oil, fresh lemon juice and black pepper!

Ingredients
- 1/3 can chickpeas
- 1 teaspoon paprika
- a handful of cos lettuce (finely chopped)
- 1 large tomato (cut into slices)
- 1/4 red onion (finely chopped)
- small handful of red & yellow pepper mixed (finely sliced)
- 1/2 avocado (sliced)
Method
- 1First fry your chickpeas and paprika in some olive oil, over medium heat.
- 2Once cooked, set aside and allow to cool.
- 3Combine all other ingredients in a salad bowl.
- 4Once your chickpeas are cooled - add to your salad and viola! It's that simple :)
