Leek & Potato Soup

Ingredients
- 3 large leeks (thinly sliced)
- 3 small potatoes (cut into chunks)
- 1 tablespoon butter
- 1 tablespoon garlic
- 1 cup veggie stock
- juice of half a lemon
- 1 teaspoon paprika
- 1 teaspoon mixed herbs
- 5 rashes streaky bacon (optional)
Method
- 1Melt butter in a pot and once melted add leeks and cook for approximately 5 minutes.
- 2Add garlic, paprika, mixed herbs, lemon juice, salt to taste and mix thoroughly.
- 3Add vegetable stock and potatoes.
- 4Cook until potatoes are soft.
- 5Once cooked, remove from heat and leave the leeks & potatoes mixture to cool.
- 6Finely chop bacon and fry until your preferred level of crisp.
- 7Once potatoes & leek mixture has cooled, blend using either a hand-blender/blender/food processor.
- 8Once blended, pour the mixture back into the pot and reheat.
- 9Once warm, add bacon and viola!
