Leek & Potato Soup

Ingredients

  • 3 large leeks (thinly sliced)
  • 3 small potatoes (cut into chunks)
  • 1 tablespoon butter
  • 1 tablespoon garlic
  • 1 cup veggie stock
  • juice of half a lemon
  • 1 teaspoon paprika
  • 1 teaspoon mixed herbs
  • 5 rashes streaky bacon (optional)

Method

  • 1Melt butter in a pot and once melted add leeks and cook for approximately 5 minutes.
  • 2Add garlic, paprika, mixed herbs, lemon juice, salt to taste and mix thoroughly.
  • 3Add vegetable stock and potatoes.
  • 4Cook until potatoes are soft.
  • 5Once cooked, remove from heat and leave the leeks & potatoes mixture to cool.
  • 6Finely chop bacon and fry until your preferred level of crisp.
  • 7Once potatoes & leek mixture has cooled, blend using either a hand-blender/blender/food processor.
  • 8Once blended, pour the mixture back into the pot and reheat.
  • 9Once warm, add bacon and viola!
