Tomato Soup with Cheesy Toastie

A heart-warming bowl of tomato soup served with a crispy, crunchy cheeeeesy toastie!

Ingredients
Soup:
- 2 packs cherry tomatoes (halved)
- 3 sprigs fresh thyme (removed from stalk)
- 1/2 onion (roughly chopped)
- 2 cloves garlic (whole)
- 1 fresh chilli (optional; whole)
- 1/4 can coconut milk
Toastie:
- 4 slices of bread of choice
- handful grated cheddar
- sprinkle of feta
- knob of butter
Method
Soup:
- 1Preheat oven to 200 degrees.
- 2Place the tomatoes, onions, whole garlic, whole chilli and thyme on a baking tray, drizzle with olive oil and season with salt & pepper and bake for 15 minutes.
- 3Remove from oven and transfer to a cooking pot.
- 4On low heat, simmer the mixture and add your coconut milk, stirring thoroughly for about 5 minutes.
- 5Transfer to a blender and blend the mixture thoroughly.
- 6Return the mixture to the pot, season to taste and simmer until ready to serve!
Toastie:
- 1Heat half of your butter in a non-stick pan on medium-high heat and use the other half to butter the inside of the bread.
- 2Add grated cheese and feta to two slices and top with the remaining two slices.
- 3Toast each side of the toastie in the pan for about 4 minutes a side.
